2. In a mixing bowl, whisk together the 6 eggs and parmesan cheese. Season with salt and pepper to taste. Set aside.
3. Heat olive oil in a large skillet over medium heat. Stir-fry the garlic and onion for 3 minutes, then add the tomato and peppers. Cook for 3 minutes stirring often.
4. Transfer vegetables into a small baking dish (enough to fit in the Air Fryer), pour the beaten eggs.
5. Place baking dish in the Air Fryer cooking basket and cook for about 10 minutes.
